Is it possible to use the core2 controller to control a four-wheels mecanum robot?

If yes, how do I start?

Yes, it is possible.
The best would be to start with getting familiar with mecanum drive kinematics and dynamics, you can find detailed description in this article.
Then you will need to build or buy your platform (robot with four mecanum wheels, DC motors and encoders).
Last step will be to implement your code to control robot basing on the mecanum drive kinematics.
